Recipe :: Vegan Tacos
This is a quick and easy take on the classic taco.
1 can chickpeas
½ cup chopped cilantro
I placed some grapeseed oil in a medium saucepan and brought it to medium heat. To it I added the chickpeas, which I drained first and began to sauté them. While they were sautéing, I added the seasonings (add according to your tastes). I did this for about 10-15 minutes with the goal of heating the chickpeas all the way through. Just before taking them off of the heat, I added in the chopped cilantro and squeezed in lime juice from the lime. I left them on the heat for maybe 2-3 minutes and them removed from the heat.
On a griddle, I added a little bit of olive oil and threw on three corn tortillas on top. After about 5 minutes, I flipped them over and cooked them for another 5 minutes and placed them on a paper towel.
You can garnish your tacos with anything you want, roasted veggies, sprouts, salsa, you name it. All together, it only took about 30 minutes to make these tacos.
